Per 100 g vs. per serving
Per 100 g values let you compare products fairly. Per-serving values reflect the portion but only if the serving size is realistic.
Ingredients
Ingredients are listed by weight in decreasing order. A short list of recognisable ingredients often reflects less processing.
Free sugars and sodium
Look at the specific line for sugars and check whether they are added or naturally occurring. Sodium in mg × 2.5 gives salt in mg.
